Canadian bulk honey is predominantly light-coloured clover and canola honey from the prairies, and colour grade is the primary commercial specification alongside moisture.
The parameters that matter technically are moisture, which governs fermentation risk, HMF as an indicator of heat exposure and age, and diastase activity as a further freshness marker. A buyer accepting honey without an HMF specification is accepting unknown thermal history.
Authenticity is a live issue across the global honey trade, and it is where Canadian origin carries a genuine advantage: traceability documentation and testing regimes are available and worth asking to see rather than assuming. Adulteration testing is a reasonable contract term rather than an insult.
