Maple is the Canadian food export with the strongest unaided brand recognition in Asia, and it sells on that recognition. Quebec produces the overwhelming majority of the world's supply, from a short spring harvest driven by freeze-thaw cycles, which makes annual volume genuinely weather-dependent in a way that most food commodities are not.

The grading system is the thing buyers most often misread. Grades run from golden through amber and dark to very dark, and they describe colour and flavour intensity rather than quality. Golden is delicate and suits table use; dark and very dark are robust and are what manufacturers generally want, because the flavour has to survive being baked into something. Buyers who ask for the lightest grade assuming it is the best are usually specifying the wrong product at the higher price.

The category splits cleanly into two trades. Bulk syrup moves in drums and totes to manufacturers and repackers, and the conversation is about grade class and density. Retail is a consumer-goods trade where pack format, closure, label language and gifting presentation matter as much as the syrup, and gifting is a significant channel across several of these markets, which makes seasonal timing a real commercial variable.
