Maple grades describe colour and flavour intensity rather than quality, and misreading that is the most common and most expensive error in this category. Golden and amber are delicate and suit table use and premium retail; dark and very dark are robust and are what manufacturers generally want, because the flavour has to survive being baked into something.

Bulk syrup moves in drums and totes on grade class and density. Retail is a consumer-goods trade where format, closure, label language and gifting presentation carry as much weight as the syrup.

Maple sugar and flakes are dried derivatives serving bakery, confectionery and seasoning applications, specified on particle size and moisture, with hygroscopicity the handling issue to plan for in humid climates.
