Honey

Canadian honey is predominantly light-coloured clover and canola honey from the prairies, sold in bulk to packers and manufacturers and, increasingly, as varietal retail product.

The specification points are colour grade, moisture, HMF as an indicator of heat exposure and age, and diastase activity. For buyers concerned with authenticity (a live issue across the global honey trade) provenance documentation and testing regime are part of what is being bought, and Canadian origin carries a traceability advantage that is worth asking to see rather than assuming.

Crystallisation behaviour varies by floral source and matters for both retail presentation and processing. State whether you need liquid, creamed or crystallised-tolerant product. Agree the moisture ceiling in writing too, because it governs fermentation risk in a warm warehouse and it is the specification most often left implicit.
