Canada Western Soft White Wheat: export from Canada to ASEAN

Soft white wheat is the low-protein, weak-gluten counterpart to Red Spring, and it is bought for applications where strong gluten is a liability rather than an asset: biscuits, cakes, pastry, steamed products and certain noodle types.

Millers new to the class sometimes treat it as a cheaper substitute for bread wheat, which it is not. Using it in a pan bread grist produces a poor loaf regardless of price, and using bread wheat in a biscuit produces a tough product. The class is a functional choice.

Production is concentrated in southern Alberta under irrigation, a smaller and more geographically specific base than Red Spring, so availability is tighter and forward contracting matters more.

Specify class, grade and protein together, and agree the measurement basis. For biscuit applications, ask about the alveograph or equivalent dough-strength data rather than inferring performance from protein alone.
