Durum Wheat: export from Canada to ASEAN

Durum is bought for one thing: semolina yield and the pasta performance that follows from it. The attributes that drive it are vitreous kernel content, protein, and gluten quality, and vitreousness is the one buyers new to durum most often overlook, because it does not appear in a general wheat specification.

Canada is a major durum origin, with production concentrated in southern Saskatchewan where the dry growing season suits the crop. That climate dependence makes durum quality more variable between seasons than common wheat, so crop year is a live part of the conversation rather than a formality.

For a semolina miller the practical specification is grade, protein, and vitreous kernel percentage, with falling number relevant where the season has been wet at harvest. For a buyer supplying a pasta manufacturer downstream, agreeing those upstream saves a dispute later, because pasta faults are visible to the consumer in a way flour faults are not.

Routing follows the same logic as other prairie grain: western ports for Asia-Pacific destinations. Confirm it early, because durum moves in the same corridors as higher-volume crops and space is not always assumable at peak.
