Canned fish removes the cold-chain problem entirely, which makes it one of the more practical Canadian seafood exports for a buyer without reliable frozen handling.
What replaces the cold chain is process validation. The retort schedule, seam integrity and substantiated shelf life are the technical spine of the product, and destination authorities may ask about all three. A buyer should expect to see the process authority documentation rather than take it on trust.
The specification points are species, cut or presentation, fill weight, drained weight, pack medium (oil, brine, water or sauce) and can format. Drained weight is the number that matters commercially and is worth contracting rather than inferring from fill weight.
Can format should follow destination retail norms rather than Canadian convention. Labelling is the usual gating item, and can labels are ordered in large volumes, so get artwork reviewed first.
Prepared or preserved fish classifies apart from frozen, by species and by packing medium in many schedules. Send the species, presentation and medium together so the line we confirm is the right one.
