Frozen dough is the most cold-chain-dependent product in the bakery category and the one that most often fails on the destination side rather than in transit. It requires an unbroken chain and a destination baker with proofing capability and the discipline to use it.

The specification that separates workable product from a failed programme is freeze-thaw tolerance: the yeast has to survive freezing and still perform after a real supply chain rather than a laboratory one. Ask how it has been validated.

Beyond that, specify formulation, piece weight, whether the dough is pre-proofed or raw, and the proof and bake instructions validated at destination conditions rather than Canadian ones.

For buyers without confident cold-chain control, par-baked product is the more forgiving route and usually the better commercial decision even at a higher unit cost.

Frozen dough classifies as a prepared bakery product rather than as flour, and the duty position frequently differs substantially from the ingredient. Confirm it before deciding whether to export flour or finished dough.
