The specification that separates workable product from a failed programme is freeze-thaw tolerance: the yeast has to survive freezing and still perform after a real supply chain rather than a laboratory one. Ask how it has been validated.
Beyond that, specify formulation, piece weight, whether the dough is pre-proofed or raw, and the proof and bake instructions validated at destination conditions rather than Canadian ones.
For buyers without confident cold-chain control, par-baked product is the more forgiving route and usually the better commercial decision even at a higher unit cost.
