Maple content, whether the sweetener is pure maple or blended, and what may be claimed on the label are the first things to settle. A product marketed on maple with minimal maple content is a regulatory and reputational risk in a premium channel.
The technical specification is brix, viscosity, pH, and the preservation system, which governs shelf stability and requires destination clearance.
Shelf life should be substantiated under destination storage rather than Canadian, and viscosity in particular behaves differently at tropical ambient temperatures: a sauce that pours correctly in Canada can be noticeably thinner on a shelf in Jakarta.
Sauces classify as prepared food rather than as maple syrup, so a maple-based sauce does not inherit the syrup's duty position. Confirm the line for the finished formulation rather than for its headline ingredient.
