Bakery

Frozen bakery is a cold-chain product with a manufacturing buyer, and it succeeds or fails on whether the destination chain holds. Frozen dough requires an unbroken chain and a destination baker with proofing capability; par-baked product tolerates more and finishes faster, which is why it dominates foodservice and in-store bakery supply.

The specification points are formulation, piece weight, proof and bake instructions validated at destination conditions, and freeze-thaw tolerance. That last one is what separates product that survives a real supply chain from product that only works in a test.

Biscuits and cookies are shelf-stable and behave as a consumer-goods trade instead, where pack format and shelf life under destination humidity are the deciding variables.
