Pork Ribs: export from Canada to ASEAN
Ribs are among the highest-value pork cuts in Asian foodservice and the specification vocabulary is precise: spare ribs, back ribs and the St Louis trim are distinct products with different bone structure, meat cover and price.
The two parameters that decide value are weight band and meat cover over the bone. A light rack with thin cover is a different commercial product from a heavy well-covered one, and buyers who specify only the cut name receive whatever the plant is running.
Membrane removal is a further variable worth stating, since it affects preparation at the destination and is not universally standard.
Frozen is the volume trade. Freezing method matters here as elsewhere for drip loss, and packing format matters more than usual because ribs are awkward to stack and carton configuration affects both freight efficiency and thawing behaviour.
Rib cuts generally classify with other fresh or frozen pork, but the position is worth confirming alongside establishment eligibility rather than after it, since eligibility is the binding constraint and there is no point pricing a line you cannot ship against.
