Pork belly is the highest-value primal in most Asian markets and the specification is unusually detailed for a raw material. Buyers work to a thickness range, a lean-to-fat ratio, a weight band and a defined trim, and those four together determine whether the belly suits slicing for bacon, cubing for braising, or roasting whole.

Canada is a substantial pork exporter with production concentrated in Quebec, Ontario and Manitoba, and processing scaled for export rather than for domestic supply alone. That matters because export-scale plants are the ones geared to hold a consistent specification across a long programme.

The practical variables to settle are frozen versus chilled, the packing format, and the trim standard: described in writing rather than by reference to a photograph. Frozen dominates on this route for shelf-life reasons, and the freezing method affects drip loss on thaw, which is a real cost the buyer carries.

Establishment eligibility for the destination is the gating question and should be confirmed before commercial terms, since it is binary and decided by the destination authority.
