Fresh & Frozen Pork Cuts
The primal cuts are where the Canada–Asia pork trade makes commercial sense in both directions: belly in particular carries far more value in these markets than at home, which is what makes the trade structural rather than a matter of surplus.
Each cut is bought on a weight band and a written trim standard. "Trimmed" is not a specification: fat cover depth, whether the chine is removed, and what is retained all sit inside that word and all move the price. Write it out rather than referring to a photograph.
Frozen dominates the route. Ask about the freezing method and the packing format, because drip loss on thaw is a real yield cost that never appears in the per-kilogram price. Establishment eligibility for the destination gates all of it.
