Lumpfish Roe: export from Canada to ASEAN
Lumpfish roe is the accessible caviar substitute, sold dyed black or red and used in garnish, retail and foodservice applications where genuine sturgeon caviar is not the price point.
The specification points are grain size, colour uniformity after dyeing, salt content, and the preservative system, which is what determines shelf life and which is subject to destination approval: a preservative permitted in Canada may not be permitted where you are shipping. Grain integrity matters commercially: the product is used as a visible garnish, so broken or collapsed grains are a defect the end user sees directly.
Canadian supply comes from a small seasonal Atlantic fishery, so volumes are limited and a buyer should expect to contract against production. Specify grade, colour, salt level and the preservative system explicitly.
