Roe & Caviar

Roe is a specialist trade with concentrated demand and demanding buyers. Herring roe in particular has an established market in East and Southeast Asia, where grading on size, colour, firmness and maturity is fine-grained and drives large price differences between adjacent grades.

The harvest window is narrow and the quality depends heavily on timing within it, so this is a category where the fishery calendar and the commercial calendar have to be aligned in advance rather than negotiated in season.

Processing (salted, frozen, or further prepared) is a separate specification layer. State the grade, the processing and the intended presentation, because the same raw material reaches very different values depending on all three.
