Corn

Canadian corn production is concentrated in Ontario, Quebec and Manitoba, serving feed, wet milling and food processing. As an export to Southeast Asia it competes against much larger and closer origins, so the trade tends to be specification-led rather than volume-led: identity-preserved, non-GMO and food-grade programmes are where Canadian corn has a distinctive position.

Corn starch is a separate product entirely: a wet-milled ingredient specified on moisture, viscosity behaviour, whitening and, for modified starches, the modification itself.

State which you are buying and the application. A feed compounder, a food processor buying identity-preserved corn, and a manufacturer buying starch as a functional ingredient are three different conversations that share only a crop name.
