Beef Trim: export from Canada to ASEAN

Beef trim is bought on lean percentage and nothing else really competes for attention. Grades run across a range and a processor is buying a target lean at a target price, blending across sources to hit a finished specification.

The two things worth contracting explicitly are the verification method for lean content and the tolerance around the stated figure. Small deviations compound across a formulation, and reconciling against an arrival analysis is a poor substitute for agreeing the method at load.

Fat quality matters alongside quantity. Hard fat and soft fat behave differently in emulsified and formed products, and a lean specification alone does not predict it.

Frozen blocks are standard. Establishment eligibility for the destination applies to trim exactly as it does to primal cuts and should be confirmed for the specific commodity.
