Beef Ribeye: export from Canada to ASEAN

Ribeye is the marbling cut, and it is the one where grade does the most commercial work. Buyers supplying premium foodservice are buying a marbling expectation, and a grade description that does not match what arrives is the fastest way to lose a hotel account.

The practical specification is grade, weight band, whether the cut is bone-in or boneless, cap-on or cap-off, and the ageing regime. Cap-on and cap-off are materially different products in both yield and presentation, and the term is sometimes assumed rather than stated.

Chilled ribeye into Asia is a logistics decision as much as a commercial one: the shelf-life clock defines the route, and a delay that would be inconvenient for a frozen container is terminal for a chilled one. Frozen is the volume trade and forgiving of the sea route.

As with all Canadian beef, establishment eligibility for the destination market gates everything and is confirmed with the destination authority before commercial discussion is worth having.
