Pork Livers: export from Canada to ASEAN
Offal is a serious export trade rather than a by-product afterthought, and Southeast Asia is one of its principal destinations. Pork liver is bought on appearance, colour, absence of cuts and bruising, and above all on the freezing method, because texture on thaw is what the end user judges.
The specification conversation is shorter than for muscle cuts but less forgiving. Blast-frozen product handled properly holds structure; slow-frozen product does not, and no price adjustment repairs it once it arrives.
Offal carries its own destination eligibility questions, frequently distinct from those for muscle cuts from the same establishment. Do not assume that an establishment approved for pork cuts is approved for pork offal into the same market: confirm the position for the specific commodity before contracting.
Packing format and carton weight should be agreed explicitly, since offal is often handled further down a less mechanised chain than primal cuts. Agree the carton count per pallet as well as the carton weight, because a chain that breaks bulk by hand prices labour into every extra unit it has to lift.
