Pork Offal
Offal is a serious export trade rather than a by-product afterthought, and Southeast Asia is one of its principal destinations. The items are bought on appearance, colour, absence of cuts and bruising, and above all on the freezing method, because texture on thaw is what the end user judges.
The specification conversation is shorter than for muscle cuts and less forgiving. Blast-frozen product handled properly holds structure; slow-frozen product does not, and no price adjustment repairs it after arrival.
The critical point is eligibility: offal frequently carries destination requirements distinct from those for muscle cuts out of the same plant. Do not assume an establishment approved for pork cuts is approved for pork offal into the same market: confirm the position for the specific commodity.
