Yellow Mustard Seed: export from Canada to ASEAN

Canada is the largest exporter of mustard seed in the world, and yellow is the mild type used for condiment mustard, mayonnaise and as a functional ingredient: it emulsifies, which is why it appears in formulations where no mustard flavour is wanted.

The specification points are purity, admixture with other mustard types, moisture and foreign material. For condiment manufacturers, colour consistency matters because it carries through to the finished product. For formulators using mustard as an emulsifier, particle size after milling matters more than seed appearance.

Production is concentrated in Saskatchewan and Alberta with a single annual harvest. Because Canada supplies a large share of world trade, availability is generally reliable, but a poor crop year moves price sharply given how concentrated the origin is.

State whether you are buying whole seed or intend to mill, and whether the application is flavour or function. Yellow, brown and oriental mustard are not interchangeable, and specifying by colour alone leaves the pungency question open.
