Fibres

Dietary fibres are bought for function and for label position simultaneously, which is unusual and shapes the specification. Functionally they deliver water binding, texture and yield; on label they support fibre content claims. Both have to work.

Oat fibre and pea fibre are specified on particle size, water-holding capacity, colour and flavour neutrality. Particle size drives mouthfeel, and a fibre that performs well analytically can be rejected on grittiness.

Canada's position rests on the oat and pulse crops feeding the processing directly. As with proteins, qualify in your own matrix, and check that any fibre content claim you intend to make is permitted and calculated the way the destination requires: the calculation method differs between markets.
