Anhydrous milk fat is butter with the water and solids removed, and for buyers in warm climates it is frequently the correct answer where a recipe says butter. It stores and ships without the cold-chain fragility of butter and reconstitutes predictably in a formulation.

The specification points are fat content, moisture, free fatty acid, peroxide value and flavour. Oxidative stability is the parameter to focus on for a tropical destination, since the product is nearly pure fat and has no water phase to buffer it.

The formats are drums, totes and bulk. Handling requires melting, so the destination facility needs the capability: confirm it before contracting, because it is a common gap.

Canadian supply comes off the supply-managed dairy sector, so volumes are contracted. AMF and butter oil are broadly the same product under different naming conventions; confirm the specification rather than the name.

AMF and butter classify separately despite serving the same function, and the duty positions can differ enough to change which one you should ship. That comparison is worth running before the logistics comparison.
