Sea Scallops: export from Canada to ASEAN

Scallops are bought on count size (the number per unit weight) and on whether the product is dry or treated. That second distinction is the one that decides quality perception, and it is where buyers get caught.

Dry scallops are unadditised. Treated scallops have been soaked in a phosphate solution, which adds water weight and changes cooking behaviour: they release liquid in the pan and will not sear properly. A treated scallop is cheaper per kilogram and more expensive per portion, and a chef notices immediately.

Canadian sea scallops from the Atlantic are a premium product internationally, harvested on a managed fishery. Specify count size, dry or treated, and IQF or block frozen. For foodservice buyers, dry and IQF at a stated count is usually the specification worth paying for.

As with other Canadian seafood, confirm the destination's establishment and consignment requirements before planning a first shipment rather than after.
