Pacific Wild Salmon: export from Canada to ASEAN

Pacific wild salmon is five species sold at five price points, and specifying salmon without the species is meaningless. Sockeye carries the deepest red colour and the premium; coho sits below it; pink and chum are volume species going largely to canning and processing; chinook is a high-value specialty.

Colour and fat content follow the species and, within a species, the run and the timing, so a buyer with a fixed colour expectation should specify it rather than infer it from the species name alone.

The fishery is seasonal and quota-managed with genuinely variable annual returns: some years a species is abundant and cheap, other years it is scarce. Continuous programmes are difficult on wild salmon for that reason, and buyers needing continuity generally specify farmed Atlantic instead.

Salmon classifies by species group and presentation, with fresh, frozen, fillet and prepared forms distinguished. Wild and farmed are sometimes separated too, so state which you are shipping.
