Cultures & Enzymes
Cultures and enzymes are living or labile biological products, and the handling requirement is what distinguishes buying them from buying any other ingredient. Activity is specified in defined units, and it declines with time and temperature, so cold-chain integrity and remaining activity at delivery are the practical commercial terms, not just the specification at manufacture.
Dairy cultures are specified by strain composition and target application; enzymes by activity, optimal conditions and substrate.
Regulatory approval is the gating item and it is specific: enzymes and cultures are subject to destination-specific permitted lists, and one approved in Canada is not automatically approved elsewhere. Confirm the position for the specific preparation before designing it into a process.
