Beef Offal
Beef offal is a substantial export trade into Asia, where several items command values that have no equivalent in the domestic market. Tongue and tripe in particular are specification-sensitive products with established buyers rather than opportunistic sales.
As with pork offal, the freezing method is the parameter that decides acceptance, and eligibility for the destination is frequently distinct from the eligibility covering muscle cuts from the same establishment. Confirm the specific commodity rather than the plant in general.
Tripe carries additional processing variables (washed, bleached or green) that change the product completely and should be stated explicitly at enquiry rather than assumed from the category name.
Packing format and carton weight are worth agreeing up front too, since offal typically moves further down a less mechanised handling chain at destination than primal cuts do, and a carton specification that suits a Canadian cold store can be impractical in a wet market supply chain.
